Simple, green (uncooked/raw) really fresh prawns (snap frozen then immediately on a direct plane to Hong Kong). The prawns are wild caught using prawn trawlers and seine nets. The Spencer Gulf is the body of water that runs from the Southern Ocean up to Port Augusta in South Australia.

The Spencer Gulf prawn fishery is MSC certified, which is the internationally recognised process for recognition of a sustainably managed fishery.

Spencer Gulf King Prawns are treated at sea with sodium metabisulphate (preservative 223), which is global industry standard. This information is included on the product packaging labelling. This is the same as the preservative used in beer and wine making, fruit juices and bakery items. Sodium metabisulfite oxidizes in the liver to sulfate which is excreted in the urine.

The Spencer Gulf King Prawn Fishery sailed into the history books with a series of firsts in sustainability in November 2011. Represented by the Spencer Gulf and West Coast Prawn Fisherman’s Association (SGWCPFA), this fishery is the first prawn fishery in the Asia Pacific, and the first king prawn fishery in the world, to gain the prestigious Marine Stewardship Council (MSC) certification for sustainability.

The Marine Stewardship Council is an international non-profit organisation established to address the problem of unsustainable fishing and safeguard seafood supplies for the future. It’s headquarters are located in London.
