It is a creamy, hard and crumbly cheese in texture when first made but after a few weeks of ripening it develops a beautiful white rind with a mushroomy aroma.The cheese is pale in colour with a rich, buttery flavour. It works well as a table cheese but works best when warmed.
Food Pairing: It works well when paired with a light red wine or a Normandy cider.
