This sirloin/ striploin roast consists of a muscle that does little work, making the meat particularly tender, though not as tender as the nearby rib eye or tenderloin. This cut is also known as porterhouse in Australia and New Zealand. The fat content of the strip is somewhere between the two cuts. Unlike the tenderloin, the short loin is a sizable muscle, allowing it to be cut into the larger portions. A simple oven roasting brings out the pure Grass-Fed Cape Grim taste, add a little light oil and some salt and pepper seasoning and you are done, no sauces required for this roast.
